Step inside Hollow and you’ll feel transported from a quiet hamlet surrounded by dairy farms into a chic modern speakeasy straight from the block of a hip Brooklyn neighborhood. No easy feat, accomplished by proud owners Jake Adams and Eden Rehmet. The couple started as weekenders from the city, watching the town develop for over three years before deciding to put down roots for good in Delaware County.
Hollow combines cocktails and tapas in glorious harmony, with a menu featuring regional delicacies highlighting the best foods the Catskills has to offer with an alluring selection of local beers and ciders on draft.
